Rotational Head Chef _ M/Y Megan (45m Feadship)                     June 2022 - Present  Same owner, standards have not changed. Extremely high standards with large variety on buffets and A la Carte dinner menu. Always a challenge and loving it. However, I would like a new challenge.

 

Sole Chef _ M/Y Awatea (45m Haakvoort)                             October 2020 - June 2022

Menu planning, provisioning and food prep with a wide range of challenging dietary requirements and preferences. Very challenging but fun.

 

Alternating Summer and Winter chef roles                 November 2016 - October 2020

Winter as Luxury Chalet Chef at Alpine Escape Boutique Ski Chalets (Courchevel) & summers on M/Y Megan (45m Feadship).            

 

Executive Chef _ Kream Restaurant (Johannesburg)      April 2016 - September 2016 Contracted to set up the kitchen for the newly constructed 200 seater fine dining restaurant, train the 30 chefs and ensure efficient food prep through all departments. Was offered shares, however, I wanted to travel.

 

Luxury Chalet Chef _ Alpine Escape Boutique Chalets   November 2015 - April 2016 Plan 6 course dinner menus with diverse dietaries in beautiful Courchevel chalets. Included provisioning, breakfast as ordered with daily specials and afternoon tea. Much like charter yachts, I am told.

 

Head Chef _ M/Y Megan (45m Feadship)                             April 2015 - October 2015

First yacht job, started as Sous, was promoted to Head Chef. Owners are very particular with their special dietary needs.,  Not enough space to begin to describe.

 

Executive Chef _ Priva Gastro Lounge (Pretoria)                        April 2014 - April 2015 Opened and designed kitchen, trained staff and prepared food for high end restaurant in a Champagne and Oyster, Whiskey and Cigar lounge setting. This was an amazing Culinary journey for me.
